The canes are trained upwards and maintained between two pairs of horizontal wires, which makes it easier to trim the extremities of the canes as they grow, creating an even, uniform hedge structure.

Hedging, between mid-May and July, is increasingly done by machine, unlike the process of thinning out, which is always done by hand. Leaves close to the bunches are eliminated to increase exposure to the sun and also to improve the airflow around the bunches, thereby reducing the risk of grey rot.
