Maturation








Starting around mid-August (at “véraison”, when the grape skins begins to show their true color) the period of maturation lasts about 45 days. The level of sugar in the grapes increases while the level of acidity decreases. In mid-September the last few leaves around the bunches can be removed in order to give maximum exposure to the sun and reduce the risk of rot.
